Lobsterfest, pool parties, and sightseeing with Shannon!

We have been having a blast! Lobsterfest went on all weekend. We went all three days...Friday was a preview and we ate some Lobster nachos and skewers, Saturday we relaxed in the morning (well Shannon and I did, while Dave and Victor started the casita kitchen!) and then we met on Shannon's porch for a couple Belikins before heading over....
 Sticks did not come with us and was unhappy about it.

We went again on Sunday morning....and had this awesome Lobster tail from Wendy's (not the chain.)
Shannon woke me up Sunday to watch this great sunrise too....
We then headed to The Belize Ocean Club for the pool party....

 We decided it would be SO FUN to ride in the back of the Wingle on the way home. Can you see how much fun that was for me??
Today Shannon and I walked about 7 miles all over the village :) I can still get lost! She really enjoyed that as the temps kept rising, and I kept leading her where there was no breeze.


 We took it easy tonight and made some chicken and rice, and sat out on Shannon's porch....really pretty evening!
 We are having a great time :) We are going to try and go to Laughingbird Caye tomorrow weather permitting. We have a lot more fun in store for the week!!

Shannon's visit!!

Shannon inspired me to capture what it is like to visit here. :) She has taken a bunch of pictures on her sweet camera, but because I couldn't figure out how to get them off the camera, I took a picture of her the strange resolution. This is not very 2014 of me :) I didn't want to disturb her in her hammock :)

Here is her first hour.....started with some tropical drinks!

She got a few pictures of the inside of the Luna cabana....I figured I should post because soon it will look much different!

We stopped at Mango's for lunch and got some fun vacation-ey shots...

And we went to Detatch this morning for breakfast....Sticks is happy to have his American girlfriend here!
We are heading to Lobsterfest this afternoon and evening...more fun to come! (with more appropriate resolution pictures!) :)

Shannon is here! We are having an awesome time. Lobsterfest is happening and we went last night and ate lobster nachos, lobster skewers, listened to some steel drum was a really good time. It is going on all weekend and we are headed over there later today as well:) Her visit deserves its own post next :)

We also have been starting to decorate and get the casita ready for moving! We worked our butts off to be ready when Shannon got here so we could relax and have fun with her :)

If you are living in Belize, I highly recommend Saeed from Bamboo Belize for your furniture needs. He is so nice and his furniture is awesome!

We also ran into a guy who does Mayan carvings off the Southern Highway....Garcia from Wood and Slate Carving....these really make you feel you are somewhere exotic!

To try and stay on budget:)....I took on the task of painting some signs and art for the property. I used to take art class but it has been a while :) While real artists come up with their own ideas, I am taking ideas from other art that I like (in case anyone wanted to let me know that my stuff is not exactly original :) ) The art down here is so charming and will give anyone inspiration!

We also went to Dangriga and got our passports stamped for the first time. You have to do this every 30 days in order to stay in the country. It was quick and easy....not cheap, but a necessary part of living here! Here is a sample of the immigration office in Dangriga :)

Victor finished the outdoor shower attached to the casita. Dave now exclusively showers outside.....:-p!
And finally, a fun thing to do down here is to try all of the exotic fruits available. I need to get more pictures of the weird produce we are eating. Here is an example....I think this might be a dragonfruit? It tastes like melon and kiwi. Important to note....this fruit has some color in it that dyes your "outputs" a lovely shade of purple. I thought I might have contracted a tropical illness until I researched lol.

Lots of deadlines and things happening!! :)

Whew, it has been a pretty crushing week! We have Shannon, our good friend from the US, coming on Thursday, so we set a bunch of deadlines before she came so we can relax and have fun while she is here. We also, since this is a business :), have a number of construction and paperwork issues to get done so we can have a totally up and running resort. We are certainly learning A LOT about the layers of understanding you need to have when operating a business in another country...and I am sure we aren't done yet :) We are in the "less fun" part of the project, where there is some urgency and a lot of that feeling like you don't know what you don't know. Thanks to our contacts through Rotary and some of our friends here, we are slowly piecing together the parts you have to learn as you go. If you google "starting a business in Belize," you will see that there are 500 different lists and ways people will tell you is the actual "right way." :) We also found out that a good friend of ours, Megan, has a cool mom (Kate from Kate's fish at the West Side Market) is coming in July so how fun! We get more practice :)

The casita is coming along really nicely! Victor has been working like a maniac to paint and do the tile work, and while "casita' does mean little house in Spanish, we are taking that quite literally and making it as Mexican style as we can. It will feel as if you are in a Mexican restaurant :)

We have managed to do a little hanging out as well this week. We had a fun time with Chris and Sonia and new friends, Laura and Keith, who are looking at places down here. A GREAT place to eat here is called Detach, here are a few pics from a dinner there (great for breakfast, can't beat the view, and you can walk there from our house!):

We also made another trip to the Secret Garden, and I had a few pictures that just had to be shared!

We also went last week to a place called Spanish Lookout, which is mostly Mennonite, and it is really an experience. It feels like Southern Ohio and Central American had a baby. Rolling hills, pastures, farmhouses, dairies, some US sounding restaurants....but they aren't really...

It will be a super exciting couple weeks! I joined the Placencia Rotary club, so I will be getting pinned, we have LOBSTERFEST!, moving into the casita, Shannon coming--and a couple of our friends have friends coming too, so there will be a lot of reports on the fun things to do (caye trips, sunset cruise, cave tubing). Lastly, my blog will be also featured on WOW Belize....thanks Chris! Chris has a lot of exciting business ideas for Belize and I am honored to be on the site! More info to come on that :)
